Almond Mousse Cake for Reproductive Health

I have developed this cake to nourish the sukra dhatu/reproductive tissues. The almonds I used have been soaked overnight and are the discarded meal from making almond milk. This is a great use for these, as the soaking ensures they do not have a drying quality and are easy to digest.

When we look for foods that nourish this tissue, which is dominant in water, we look for cooling and moistening foods. We can also look for foods with a round or oval shape and a lighter colour such as nutmeg, almonds, cardamom, dates and coconut, all of which are in this cake. This cake is suitable for any reproductive issues or disorders of the sukra dhatu such as endometriosis, PCOS, blocked fallopian tube and bacterial infections. Feel free to modify to your own tastes:

Ingredients:

For the base, blend together:

100g almond meal (from almonds soaked overnight then ground/blended)

120g walnuts or desiccated coconut (or a mix of the two)

100g dates

Press down firmly and evenly in to the base of a round cake tin and place in the fridge

Meanwhile, for the mousse blend together for around 10 mins:

370g almond meal (from almonds soaked overnight then ground/blended)

1 tin of coconut milk

1/2 tsp of almond extract and 1/2 tsp of vanilla extract (optional)

3 tbsp coconut oil melted

1/4 tsp ground cardamom

1/4 tsp ground nutmeg

3 tbsp maple syrup

zest of a lime (optional)

Spoon on to the base and set in the fridge overnight or in the freezer for 3 hours. Keep in the fridge.
