Spiced, date and walnut scones (great for kapha season, balancing for all dosha)

These wholesome scones make a great on the go snack. They are low in sugars and made of whole grains which means they are nutrient dense and will keep the body and mind going for longer with no crashing. There are a few changes that I will detail below for different imbalances but generally these are balancing for all dosha and part of a sattvic diet. They are particularly great for kapha dosha and kapha season (winter and spring) due to the low sugar, high fibre and the wholemeal wheat which is slightly drying (soaking up excess kapha/water element). The spices are also gently warming meaning they are great for the colder seasons and help to warm up kapha and vata's natural coldness, this also results in an increase in digestive capability, by helping warm up and balance the digestive fire (agni).

Ingredients: makes 12

4 flax or chia eggs (4tbsp ground flax/chia seed mixed with 12tbsp of water)

1/2 cup coconut sugar (or brown sugar)

4 cups of wholemeal spelt flour (or just wholemeal)

5 tbsp melted coconut oil

5 tbsp of plant based milk of choice

3 tbsp of maple syrup (or rice/agave/date)

2 tsp vanilla extract

3 tsp baking powder

2 tsp cinnamon

1 tsp ginger

1/4 nutmeg

1/4 tsp cloves

pinch of black pepper and himalayan salt

1/2 cup of cupped walnuts

1/2 cup of chopped dates or raisins

Instructions:

1. Pre-heat oven to 180c

2. Line a baking tray

3. Mix the ground flax/chia with the water and leave for 10 mins

4. Next, mix in the melted coconut oil, maple syrup, milk and vanilla

5. Sift the flour, spices, baking powder and coconut sugar in to a bowl

6. Mix in the wet ingredients and nuts/dates to form a dough (add more liquid if it is still very stiff)

7. Form in to medium sized balls and push down slightly as you lay them on the baking tray (they will not spread in the oven)

8. Bake for around 15-20 mins until slightly golden.

9. Cool on a wire rack

For vata imbalances-

Scones can sometimes be a little drying for vata so if you are affected by this at all you can do a few things to help:

- Have the scone with a glass of warm spiced milk or chai (not oat milk)

- Change the wheat flour to rice flour as this grain brings moisture to the body, alleviating vatas natural dryness.

- Avoid the nuts, add more dates or raisins instead (nuts can be a little drying especially when roasted/cooked, almonds are a little easier to digest so you could try swapping these in too)

- Avoid using oat milk in the mix (oats are drying) any other milk is fine

For pitta imbalances:

- Avoid the nuts or switch to almonds (nuts may be aggravating due to their oil content but almonds are more cooling).

- Avoid the ginger, black pepper and cloves and add less cinnamon and nutmeg. You can add some ground cardamom instead as this is cooling.

- Use coconut milk in the mix (very cooling).

- Use chia seeds instead of flax (flax are more pungent and oily, therefore heating).

For kapha imbalances

These scones should be suitable for kapha imbalances however if you are finding them challenging try:

- Add a little more spice to really warm up the digestive fire and get everything moving.

- Avoid nuts (the oil could aggravate kapha slightly).

- Use oat milk in the mix (this is drying helping to remove excess moisture).
