An Ayurvedic take on blondies suitable for all doshas specially vata and pitta. By using coconut oil and coconut milk, along with dates and two types of cooling sugar this is a great cake for the spring/summer. The wholemeal flour and spices help this sweet treat to be suitable and easy to digest for kapha dosha too in moderation.
Makes 18 (feel free to half the mixture for less)
Ingredients
1 and 1/3 cups of melted coconut oil
1 and 2/3 cups coconut or almond milk
1/4 cup maple syrup
1 and 1/3 cup coconut sugar
6 cups wholemeal flour (or wholemeal spelt flour)
2 tsp baking powder
1.5 tsp bicarbonate of soda
2 tsp cinnamon
1 tsp ginger
1/4 tsp grated nutmeg
1/2 tsp pink salt
pinch of turmeric
1 cup chopped dates
1 cups chopped walnuts
150g vegan white chocolate
(optional)
Instructions
Set the oven to 180 degrees, grease a large rectangular pan with coconut oil then dust it with flour
Mix all the wet ingredients together then sift in the dry ingredients, mix well
Mix in the chopped dates, nuts and chocolate, keep a few nuts aside for the top
Spread the mix into the prepared pan and add some walnuts to the top, put into the oven and let cook for around 15-20 mins or until a skewer comes out clean.
